A Character turned to Stone cannot be attacked, does not take actions, and in most ways acts as if dead. The only differences are, Life won't work, and they retain their hit points. As with Toad and Mini, a Monster turned to Stone is removed from the battlefield if killed. Esuna 5 cures Stone outside of combat, while Esuna 6 is required during combat. However, multi-target Spells ignore Stone Characters just as dead Characters, so you'll have to cure them one at a time if you want to do so during combat. Outside of combat, Esuna 6 can cure the entire party of Stone in one casting.
